Bowl of chili for the chilly weather
My son’s school has a Harvest festival each October and every time they have chili for sale.
When I saw the chili for the first time I told myself ” There is no way in hell I’m eating this!”, but when I finally tried it, I was pleasantly surprised, because it was really delicious! That was actually where I picked up the habit of eating the chili with sour cream and cheddar cheese too. I have been looking online for the perfect recipe and I found this “Best chili you will ever taste“recipe and I decided this is it. I changed some things in it, so it’s not completely the original, but I still felt the need to quote the link where I got it from.
It is indeed the best chili I ever tasted!

Ingredients
You will need:
2 tsp oil
1 red onion, chopped
1 white onion, chopped
3 cloves garlic
2 cups sweet Mexican peppers ( red, yellow, orange) chopped
1 lbs lean ground beef
2 cups crushed tomatoes
1 can beer
1 cup strong espresso coffee ( already brewed, not ground dry coffee)
1 cup tomato paste
1 1/2 cup water
1/2 cup brown sugar ( or white + molasses)
3 tbs hot sauce
2 tbsp cumin
1 tbsp cocoa
1 tsp oregano
1/2 tsp cayenne pepper
1 tsp salt
2 cups red beans ( cooked)
1 chili pepper, chopped

Preparation
1. In a large pan stir-fry the beef with the oil, onions, peppers and garlic.
2. When the onions are golden add the crushed tomatoes,the beer, tomato paste, water, coffee and brown sugar. Simmer for 20 min.
3. After the first 20 min, add the hot sauce, cumin, cocoa, oregano, cayenne pepper and salt. Simmer for 40 more minutes.
4. Stir well and add the red beans ( that are already cooked!) and the chili pepper.
5. Serve hot and garnish with cheddar, sour cream and pepper.
